Chilli Con Carne Shepherd’s Pie








Serves 6


  • 1 large onion, finely diced
  • 1 red pepper, finely diced
  • 2 garlic cloves, crushed
  • 1 heaped tsp mild chilli powder
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 500g lean minced beef
  • 1 tbsp cold pressed extra virgin olive oil
  • 1 beef stock cube
  • 400g can reduced salt chopped tomatoes
  • 2 tbsp tomato purée
  • 410g can red kidney beans, rinsed in water and drained
  • 1 large sweet potato, peeled, chopped into squares
  • 2 tablespoons reduced fat sour cream
  • 2 tablespoons low fat milk (of your choice)
  • Pinch of Himalayan rock salt
  • Pinch of pepper
  • 1 cup reduced fat cheese, grated


  1. Preheat your oven to 180 degrees.
  2. Boil a saucepan of water. Add the chopped potato and boil until soft and cooked through. Drain (approx. 10-15 minutes) and set aside.
  3. Heat a pan on a medium heat. Add the oil and leave for 1-2 minutes until hot. Add the onions and cook, stirring fairly frequently, for approx 5 minutes, or until the onions are soft, and slightly translucent.
  4. Add the garlic, red pepper, chilli, paprikaand cumin to the pan and leave to cook for another 5 minutes, stirring occasionally.
  5. Add the beef and cook until nicely browned, at least 5 minutes.
  6. Crumble the beef stock cubeinto a bowl filled with 300ml hot water and stir until combined. Pour into the mince mixture. Add the tomatoes, tomato puree and a pinch of salt and pepper and stir until well combined.
  7. Simmer it gently for approx. 10 minutes, stirring regularly. After simmering gently, the mince mixture should look thick and moist.
  8. Add the beans to the mince mixture and combine well. Turn off the heat and leave the chilli to stand for 10 minutes while you make the sweet potato mash.
  9. Add the sour cream, milk and a pinch of salt and pepper to the boiled potatoes and mash until well combined, creamy and free from any lumps.
  10. Spoon the mince mixture into a large ovenproof dish, or 6 individual round dishes. Spread the sweet potato mash on top, then sprinkle with the cheese. Place in the oven and grill until the topping starts to brown (approximately 10 minutes).
  11. Serve with a selection of steamed vegetables.
