Flourless Apple Tart

Keep calm and bake a tart! Cooking can be the best stress relief. The best part, you have something nutritious and delish to devour after your efforts. I hope you enjoy this apple tart as much as I do.

Serves 8

Ingredients:

Topping

  • 3 apples (I used Granny Smith)
  • 1 tablespoon cinnamon
  • 1 vanilla pod or 1 teaspoon vanilla essence
  • 250ml unsweetened apple or orange juice

Filling

  • 120 grams almond meal
  • 1/3 cup organic maple syrup or sugar alternative (i.e. Natvia or Stevia)
  • ¾ cup organic coconut oil, melted (can be replaced with unsweetened butter)
  • 3 eggs

 Base

  • 200 grams almond meal
  • 1 egg
  • 1 vanilla pod or 1 teaspoon vanilla essence
  • 50g coconut oil, melted (can be replaced with unsweetened butter)
  • 1 tablespoon organic maple syrup or sugar alternative (i.e. Natvia or Stevia)
  • Pinch of Himalayan rock salt

Method:

  1. Preheat the oven to 160 degrees celsius.
  2. Peel and core the apples then cut each apple into even quarters.
  3. Combine the juice, vanilla and cinnamon in a medium saucepan and bring to a simmer. Add the apples and simmer for 10 minutes with the lid on. The apples should be soft but not completely collapsed. Place aside.
  4. To make the tart base, combine the egg, vanilla, coconut oil, maple syrup and salt in a food processor and blitz. Gradually fold in the almond meal until well combined.
  5. Grease a 23cm diameter pie dish with coconut oil and press the tart base mixture into the dish ensuring that the mixture is pressed up evenly around the sides. Prick the base twice with a fork.
  6. Place the base in the oven for 15 minutes or until nicely browned.
  7. To make the filling, place the eggs, maple syrup and coconut oil in a food processor and blitz until well combined.
  8. Pour the mixture over the base (there is no need to wait for the base to cool) and place the poached apples in the centre creating a flower shape (or any design you prefer!). Bake for 25-30 minutes or until nicely browned and cooked through.
  9. Serve warm topped with unsweetened Greek yoghurt, toasted nuts and fresh berries.
