These flourless orange cupcakes with date sweetened cream are light, moist and not too sweet! Perfection when teamed with a steaming cup of tea to accompany an afternoon break.

Makes 14-16 cupcakes

Cake Ingredients:

  • 2 whole oranges (skin on)
  • 2 cups almond meal
  • 3 free range eggs
  • 1/3 cup natvia/stevia (or another sugar alternative)
  • 1/3 cup reduced fat milk
  • 1 teaspoon vanilla essence
  • 2 teaspoons gluten free baking powder
  • 1 teaspoon ground cinnamon

Date Cream Ingredients:

  • 250 grams reduced fat cream cheese
  • 1 teaspoon vanilla essence
  • 9 medjool dates, pitted and chopped finely

  1. Preheat an oven to 160 degrees (fan forced).
  2. Boil oranges (with skin) for 1 hour until soft, drain then allow to cool.
  3. Roughly chop oranges and blend in a food processor until smooth.
  4. Add eggs, milk and vanilla, and process again until smooth and creamy.
  5. Transfer to a large mixing bowl and add the almond meal, natvia, cinnamon and baking powder. Stir until well combined.
  6. Spoon mixture evenly into medium-size cupcake cases and bake for approximately 20 minutes or until nicely golden and cooked through. Allow to cool before icing with the date cream.
  7. To make the date cream, blend the chopped dates in a food processor until they form a paste consistency. Chop the cream cheese into squares and add to the dates. Blend until well combined and smooth.
  8. Decorate cupcakes with dried or fresh orange segments.
  9. Enjoy!
