Which Oil is Best?

Most of us use a variety of oils on a weekly basis when whipping up culinary treats. Some oils are best for cooking at high temps, while others should be only used cold for best health benefits.  The following run down will get you clued up on which oil to use when.

Extra Virgin Olive Oil

Extra virgin olive oil (EVOO) is my daily oil of choice. Made from the first pressing of olives, it is a high quality nutritious oil, rich in healthy monounsaturated fats and jam packed with antioxidants and vitamins.

Best hot or cold? EVOO can reach smoke points (the temp where nasty chemicals are produced) between 200-215 degrees, making it a healthy option for most styles of medium to high heat cooking. EVOO is however best used in cold dishes as a salad dressing or drizzled over grilled vegetables. Choose high quality, cold-pressed, extra virgin varieties for the greatest health benefits and heat stability.
