Raw Choc Mint Brownies with Macadamia Nana-cream (my version of ice-cream)


Macadamia Nana-cream


  • 1/2 cup unsalted raw macadamias
  • 2 frozen bananas
  • 2 pitted dates
  • 1 teaspoon vanilla essence
  • 1 handful ice cubes
  • 2 tablespoons unsweetened almond milk


Blend all ingredients until smooth and creamy. Freeze for 30 mins, then blend again and return to the freezer for another 30 mins before serving.

Raw Chocolate Mint Brownies:


  • 1 1/3 cup walnuts
  • 1/2 cup raw almonds
  • 1/2 cup raw cacao powder
  • 1 cup dates
  • 1 tsp peppermint essence.


Process the walnuts, almonds and raw cacao powder until the nuts are a crumby consistency and all ingredients are well combined.

Add a couple of dates at a time (I cut them in half first) and continue to blend until the mixture becomes sticky and holds together.

Add the unsweetened almond milk as needed (to ensure the mixture isn’t dry).

Press mixture into a baking paper lined tin, top with chopped walnuts & freeze for 1 hour (or place in the fridge for 2-3 hours).

Serve with the Nana-cream, or on their own..yum x
